A single estate with 18 hectares under vine, organically grown, and the remaining 66h left as woodland. Its terrain is at an elevation of 175 to 350 metres above sea level.

Unfailingly committed to making wine while respecting the environment, it produces wines that embody its key sensory characteristics of freshness & minerality. Near obsessive attention is lavished on all manual procedures among the rows in order to coax the grapes to full, uniform ripeness and health. Grapes are processed in full respect of work in the vineyard to highlight the sensory features of the site climates and imbue each wine with its own personality. The nearby woodlands offer access to the vineyards for the beneficial insects that live there, such as ladybirds, which are of crucial importance as they prey on other insects that harm the vines. Soil at Aquila del Torre comprises flysch, alternating strata of 45 million year-old Eocene marls and sandstones. This soil was once at the bottom of the sea and the lagoon.
